Paella is a rice dish before it is anything else.
Our paellas are prepared with freshly crafted stocks, authentic Valencian rice, and our signature L Campo spice blend. Portioned for two people to share. The pan is wide and shallow for a reason: the rice cooks in a thin layer, takes the stock evenly, and finishes against the metal, where the bottom layer sets into the crust Valencians call socarrat.
The dish comes from the fields and rice paddies around Valencia, where it was cooked outdoors over a wood fire. The Valenciana on our menu keeps to that origin: rabbit, beans and rice, nothing from the sea. The seafood, black and steak paellas are the coast’s and the city’s versions of the same idea.
Chef and founder Torsten Schulz spent 2008 in Xàbia, on Spain’s Valencian coast, building the first El Campo. The paella at L Campo is the dish that crossed the ocean with the name.
An afternoon in Valencia, thirty minutes in Livermore.
Paella is a rice dish that takes an afternoon over orange wood. Chef and founder Torsten Schulz explains what in it actually needs the time, what we do in the morning so the pan can be fast, and why the sauces on top are his and not Valencia’s.
